Air Fryer Crispy Coconut Shrimp

Ingredients
  

For the Shrimp
  • 1 lb Large shrimp Peeled and deveined, tails on
For the Breading
  • 1/2 cup All-purpose flour
  • 2 large Eggs Beaten
  • 1 cup Shredded sweetened coconut
  • 1/2 cup Panko breadcrumbs
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper

  • Baking sheet
  • Three Bowls

Method
 

  1. Preheat your air fryer to 380°F (190°C).
  2. Set up your breading station. In the first bowl, place the flour. In the second bowl, whisk the eggs. In the third bowl, combine the shredded coconut, panko breadcrumbs, salt, and pepper.
  3. Pat the shrimp dry with paper towels. Dredge each shrimp first in the flour, shaking off any excess. Then dip it into the beaten eggs, letting any excess drip off. Finally, coat the shrimp thoroughly with the coconut-panko mixture, pressing gently to help it adhere.
  4. Arrange the coated shrimp in a single layer in the air fryer basket. You may need to cook in batches to avoid overcrowding.
  5. Air fry for 6-8 minutes, flipping halfway through, until the shrimp are golden brown and cooked through.
  6. Serve immediately with your favorite dipping sauce, such as sweet chili sauce or a citrus aioli.

Notes
