Almond Flour Sugar Cookie Bars

These sugar cookie bars are made with almond flour for a gluten-free and delicious treat.

Ingredients
  

For the Cookie Bars
  • 2.5 cups Almond flour finely ground
  • 1 cup Butter unsalted, softened
  • 1 cup Powdered sugar
  • 1 large Egg
  • 1 tsp Vanilla extract
  • 1/2 tsp Almond extract optional
  • 1/4 tsp Salt
For the Frosting (Optional)
  • 1 cup Powdered sugar
  • 2 tbsp Butter softened
  • 1 tbsp Milk or cream
  • 1/2 tsp Vanilla extract

Equipment

  • Mixing bowl
  • Baking pan (9x13 inch)
  • Whisk
  • Spatula

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Beat in the egg and vanilla extract (and almond extract, if using) until well combined.
  4. In a separate bowl, whisk together the almond flour and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Spread the dough evenly into the prepared baking pan.
  7. Bake for 20-25 minutes, or until the edges are lightly golden brown and the center is set.
  8. Let the bars cool completely in the pan before frosting or cutting.
  9. To make the frosting: Beat together the powdered sugar, softened butter, milk, and vanilla extract until smooth and creamy. Spread over the cooled bars.
  10. Cut into bars and serve.

Notes

Store leftover bars in an airtight container at room temperature for up to 3 days.
