Almond Vanilla Spritz Cookies

Ingredients
  

For the Cookies
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2.5 cups all-purpose flour
  • 1/4 teaspoon salt

Method
 

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg, vanilla extract, and almond extract until well combined.
  3. In a separate bowl, whisk together the flour and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Cover the dough and chill for at least 15 minutes.
  6. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Fill your spritz cookie press with the chilled dough. Press cookies onto the prepared baking sheets, spacing them about 1 inch apart.
  8. Bake for 8-10 minutes, or until the edges are lightly golden. The centers should still be soft.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

You can decorate these cookies with sprinkles before baking, or drizzle them with melted chocolate once cooled.
