Method
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
- Prepare the chicken: Place each chicken breast on a cutting board. Carefully cut a pocket into the thickest side of each breast, being careful not to cut all the way through.
- Season the chicken breasts inside and out with salt and pepper.
- Make the stuffing: In a small bowl, combine the diced apple, cubed brie cheese, chopped parsley, and breadcrumbs. Mix gently.
- Stuff the chicken: Divide the stuffing mixture evenly among the chicken breasts, filling the pockets you cut.
- Place the stuffed chicken breasts in the prepared baking dish.
- Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. The internal temperature of the chicken should reach 165°F (74°C).
- Let the chicken rest for a few minutes before serving.
Notes
You can use different types of apples, such as Gala or Honeycrisp. If you don't have brie, a creamy goat cheese can be substituted.
