Apple and Brie Stuffed Chicken

This recipe features chicken breasts stuffed with a delicious mixture of apples and brie cheese, baked until golden and juicy.

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts about 6 oz each
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Stuffing
  • 1 medium apple peeled, cored, and finely diced
  • 4 oz brie cheese rind removed, cut into small cubes
  • 1 tbsp fresh parsley chopped
  • 1 tbsp breadcrumbs plain

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Prepare the chicken: Place each chicken breast on a cutting board. Carefully cut a pocket into the thickest side of each breast, being careful not to cut all the way through.
  3. Season the chicken breasts inside and out with salt and pepper.
  4. Make the stuffing: In a small bowl, combine the diced apple, cubed brie cheese, chopped parsley, and breadcrumbs. Mix gently.
  5. Stuff the chicken: Divide the stuffing mixture evenly among the chicken breasts, filling the pockets you cut.
  6. Place the stuffed chicken breasts in the prepared baking dish.
  7. Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. The internal temperature of the chicken should reach 165°F (74°C).
  8. Let the chicken rest for a few minutes before serving.

Notes

You can use different types of apples, such as Gala or Honeycrisp. If you don't have brie, a creamy goat cheese can be substituted.
