  • 2 cups cottage cheese full fat recommended
  • 2 eggs large
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 2 apples peeled, cored, and diced

Method
 

  1. Preheat your oven to 350°F (175°C). Lightly grease a baking dish.
  2. In a mixing bowl, combine the cottage cheese, eggs, maple syrup, vanilla extract, and cinnamon. Mix until well combined.
  3. Gently fold in the diced apples.
  4. Pour the mixture into the prepared baking dish.
  5. Bake for 30 minutes, or until set and lightly golden.
  6. Let cool slightly before serving.
