- Preheat your oven to 425°F (220°C). Place a 10-inch oven-safe skillet in the oven to heat up.
- In a blender, combine the eggs, milk, flour, granulated sugar, and salt. Blend until smooth.
- Carefully remove the hot skillet from the oven. Add the butter to the skillet and let it melt. Swirl to coat the bottom.
- Pour the batter into the hot skillet.
- Arrange the sliced apples evenly over the batter.
- In a small bowl, combine the brown sugar and cinnamon. Sprinkle this mixture over the apples.
- Return the skillet to the oven and bake for 15-20 minutes, or until the pancake is puffed and golden brown.
- Remove from oven and serve immediately.
Notes
You can serve this pancake with a dusting of powdered sugar or a drizzle of maple syrup if desired.
