Method
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the sliced apples, 1/4 cup sugar, 1 teaspoon cinnamon, and lemon juice. Toss to coat the apples evenly.
- Arrange 4 tortillas in the bottom of the pie plate, overlapping them slightly to form a crust. Brush the tortillas with some of the melted butter.
- Pour the apple filling over the tortilla crust.
- Layer the remaining 4 tortillas on top of the apple filling. Brush the top tortillas with the remaining melted butter. In a small bowl, mix together the 2 tablespoons sugar and 1 teaspoon cinnamon, then sprinkle this mixture over the top tortillas.
- Bake for 25-30 minutes, or until the topping is golden brown and the apples are tender.
- Let the pie cool slightly before serving.
Notes
Serve warm, perhaps with a scoop of vanilla ice cream.
