Apple Pie with Cinnamon Tortilla

A simple and quick apple pie recipe using tortillas as the crust.

Ingredients
  

For the Filling
  • 4 medium apples peeled, cored, and sliced
  • 1/4 cup sugar or to taste
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
For the Crust
  • 8 large flour tortillas
  • 2 tablespoons butter melted
  • 2 tablespoons sugar
  • 1 teaspoon ground cinnamon

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the sliced apples, 1/4 cup sugar, 1 teaspoon cinnamon, and lemon juice. Toss to coat the apples evenly.
  3. Arrange 4 tortillas in the bottom of the pie plate, overlapping them slightly to form a crust. Brush the tortillas with some of the melted butter.
  4. Pour the apple filling over the tortilla crust.
  5. Layer the remaining 4 tortillas on top of the apple filling. Brush the top tortillas with the remaining melted butter. In a small bowl, mix together the 2 tablespoons sugar and 1 teaspoon cinnamon, then sprinkle this mixture over the top tortillas.
  6. Bake for 25-30 minutes, or until the topping is golden brown and the apples are tender.
  7. Let the pie cool slightly before serving.

Notes

Serve warm, perhaps with a scoop of vanilla ice cream.
