Ingredients
  

For the Salad
  • 2 cups cooked chicken shredded or diced
  • 1 cup dried cranberries
  • 1/2 cup sliced almonds toasted
  • 1/4 cup red onion thinly sliced
  • 2 cups mixed greens
For the Dressing
  • 1/4 cup mayonnaise
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon honey

Method
 

  1. In a large bowl, combine the cooked chicken, dried cranberries, toasted almonds, and red onion.
  2. In a small bowl, whisk together the mayonnaise, rice vinegar, soy sauce, sesame oil, and honey until well combined.
  3. Pour the dressing over the chicken mixture and toss gently to coat.
  4. Serve the salad over a bed of mixed greens.

Notes

You can add other vegetables like chopped celery or bell peppers if desired. For a lighter version, use Greek yogurt instead of mayonnaise.
