Ingredients
  

For the Toast
  • 1 slice Bread Whole grain or sourdough recommended
For the Topping
  • 1/2 Avocado Ripe
  • 1 Egg Fried or poached
  • 1 tsp Lemon juice Fresh
  • 1 tbsp Mixed seeds e.g., chia, flax, sunflower, pumpkin
  • Pinch Salt To taste
  • Pinch Black pepper Freshly ground, to taste

Equipment

  • Toaster
  • Frying pan

Method
 

  1. Toast the slice of bread to your desired crispness.
  2. While the bread is toasting, prepare the avocado. Mash half a ripe avocado in a small bowl with the lemon juice, salt, and pepper. You can leave it chunky or make it smooth.
  3. Cook the egg to your preference (fried or poached).
  4. Spread the mashed avocado evenly over the toasted bread.
  5. Place the cooked egg on top of the avocado.
  6. Sprinkle the mixed seeds over the egg and avocado.
  7. Serve immediately.

Notes

You can add a sprinkle of red pepper flakes for a little heat, or a drizzle of hot sauce.
