Method
- Toast the slice of bread to your desired crispness.
- While the bread is toasting, prepare the avocado. Mash half a ripe avocado in a small bowl with the lemon juice, salt, and pepper. You can leave it chunky or make it smooth.
- Cook the egg to your preference (fried or poached).
- Spread the mashed avocado evenly over the toasted bread.
- Place the cooked egg on top of the avocado.
- Sprinkle the mixed seeds over the egg and avocado.
- Serve immediately.
Notes
You can add a sprinkle of red pepper flakes for a little heat, or a drizzle of hot sauce.
