Method
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a small bowl, combine the softened goat cheese, minced garlic, chopped chives, and black pepper. Mix well until everything is evenly incorporated.
- Form the goat cheese mixture into small balls, about 1 inch in diameter. You should get about 12 balls.
- Roll each goat cheese ball in the crumbled bacon, pressing gently to help the bacon adhere.
- Place the bacon-wrapped goat cheese balls on the prepared baking sheet.
- Bake for 8-10 minutes, or until the goat cheese is slightly softened and warmed through. Do not overbake.
- Serve immediately.
Notes
You can prepare the goat cheese mixture and cook the bacon ahead of time. Assemble and bake just before serving for the best texture.
