Method
- Preheat your oven to 375°F (190°C).
- Spread the cottage cheese evenly in the bottom of a small baking dish.
- Make two small wells in the cottage cheese.
- Crack one egg into each well.
- Season the eggs with salt and pepper.
- Bake for 12-15 minutes, or until the egg whites are set and the yolks are cooked to your liking.
- Serve immediately.
Notes
You can add herbs like chives or parsley for extra flavor. Some people like to add a sprinkle of cheese on top before baking.
