Baked Cottage Cheese Eggs

Ingredients
  

For the Eggs
  • 1 cup cottage cheese
  • 2 large eggs
  • 1 pinch salt
  • 1 pinch black pepper

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Spread the cottage cheese evenly in the bottom of a small baking dish.
  3. Make two small wells in the cottage cheese.
  4. Crack one egg into each well.
  5. Season the eggs with salt and pepper.
  6. Bake for 12-15 minutes, or until the egg whites are set and the yolks are cooked to your liking.
  7. Serve immediately.

Notes

You can add herbs like chives or parsley for extra flavor. Some people like to add a sprinkle of cheese on top before baking.
