Method
- Preheat your oven to 400°F (200°C). Lightly grease a 12-cup muffin tin.
- On a lightly floured surface, unfold the puff pastry sheet. Cut out 12 circles using a 3-inch round cookie cutter.
- Gently press each puff pastry circle into a muffin cup, forming a small shell.
- Place one piece of brie into each puff pastry shell.
- Top each piece of brie with about 1 teaspoon of cranberry sauce.
- Brush the exposed edges of the puff pastry with the beaten egg wash.
- Bake for 12-15 minutes, or until the puff pastry is golden brown and puffed.
- If using, sprinkle with chopped rosemary and pecans immediately after removing from the oven.
- Let cool slightly in the muffin tin before carefully removing.
