Baked Cranberry Brie Bites

Easy baked brie bites with cranberry sauce and puff pastry.

Ingredients
  

For the Bites
  • 1 sheet Puff pastry thawed
  • 1 wheel Brie cheese rind removed, cut into 12 pieces
  • 1/2 cup Cranberry sauce jellied or whole berry
Optional Garnish
  • 1 sprig Rosemary chopped
  • 2 tablespoons Pecans chopped

  • Muffin tin
  • Cookie cutter

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease a 12-cup muffin tin.
  2. On a lightly floured surface, unfold the puff pastry sheet. Cut out 12 circles using a 3-inch round cookie cutter.
  3. Gently press each puff pastry circle into a muffin cup, forming a small shell.
  4. Place one piece of brie into each puff pastry shell.
  5. Top each piece of brie with about 1 teaspoon of cranberry sauce.
  6. Brush the exposed edges of the puff pastry with the beaten egg wash.
  7. Bake for 12-15 minutes, or until the puff pastry is golden brown and puffed.
  8. If using, sprinkle with chopped rosemary and pecans immediately after removing from the oven.
  9. Let cool slightly in the muffin tin before carefully removing.

Notes

Serve warm. These are best enjoyed the day they are made.
