Baked Oatmeal with Mixed Berries

This recipe makes a simple baked oatmeal dish using oats, milk, eggs, maple syrup, and mixed berries. You can bake it until soft or until fully set, depending on your preference.

Ingredients
  

Oatmeal Base
  • 1 and 3/4 cups milk (dairy or nondairy) 420ml
  • 2 large eggs
  • 1/2 cup pure maple syrup 120ml
  • 1/4 cup unsalted butter, melted and slightly cooled 4 Tbsp; 56g
  • 1/4 cup unsweetened applesauce or mashed banana 60g
  • 3 cups old-fashioned whole rolled oats 255g
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
Berries and Topping
  • 1 and 1/2 cups fresh or frozen mixed berries do not thaw
  • 1/2 cup chopped walnuts or pecans optional for topping

Equipment

  • 9x9 inch square pan or 11x7 inch rectangle pan
  • Large bowl

Method
 

  1. Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Spray a 9×9 inch square pan, or an 11×7 inch rectangle pan with nonstick spray. Any similar size pan that holds around 3 quarts works, though 8×8 inch square pan would be too small.
  2. Whisk all of the ingredients together in 1 large bowl.
  3. Pour the mixture into the prepared baking pan. Top with nuts, if you choose to use them. You can also stir the nuts into the oatmeal mixture.
  4. Bake for 35 minutes or until the center appears almost set for a soft oatmeal. For a drier and more solid baked oatmeal, bake until the center has set.
  5. Cool for 5 minutes before serving. Slice or spoon out portions and serve with yogurt, if desired. Cover leftovers tightly and refrigerate for up to 1 week.

Notes

If you use a 9x13 inch pan, the baking time will be shorter. Check the center sooner.
