Ingredients

Cake
  • 3/4 cup sugar
  • 1/2 cup sour cream
  • 1/4 cup butter, softened
  • 1 egg
  • 1 cup very ripe bananas, mashed about 2 bananas
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
Brown Butter Frosting
  • 1/2 cup butter (stick)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1.5 tbsp milk

Equipment

  • 8x8 baking dish
  • Large bowl

Method

  1. Heat your oven to 375F. Line an 8x8 baking dish with parchment paper. Overlap two pieces so the sides hang over the pan for easy removal.
  2. In a large bowl, beat together the sugar, sour cream, butter, and egg until the mixture is creamy.
  3. Blend in the mashed bananas and vanilla extract.
  4. Add the flour, baking soda, and salt. Stir together until just combined. Spread the batter evenly into the prepared pan.
  5. Bake for 20 to 25 minutes, or until the cake is golden brown. Let the cake cool slightly, then remove it from the pan using the parchment overhang.

Notes

For the frosting, brown the butter first. Melt the butter in a small saucepan over medium heat until it foams and brown bits form at the bottom. Remove from heat and let cool slightly before mixing with the powdered sugar, vanilla, and milk.
