Method
- Cook the pasta according to package directions. Drain and rinse with cold water. Set aside.
- If your chicken is not already cooked, grill or pan-fry it until cooked through. Shred or dice the chicken.
- In a large bowl, combine the cooked pasta, chicken, red onion, bell pepper, corn, and cilantro (if using).
- In a separate small bowl, whisk together the mayonnaise, ketchup, apple cider vinegar, Worcestershire sauce, garlic powder, salt, and pepper for the dressing.
- Pour the dressing over the pasta mixture. Add the BBQ sauce and toss gently to combine everything.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Notes
You can add other vegetables like celery or cherry tomatoes. For a spicier salad, add a pinch of cayenne pepper to the dressing.
