BBQ Chicken Pasta Salad

Ingredients
  

For the Salad
  • 1 pound pasta such as rotini or penne
  • 2 cups cooked chicken shredded or diced
  • 1 cup BBQ sauce your favorite kind
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper diced (any color)
  • 1/2 cup corn canned or frozen, thawed
  • 1/4 cup cilantro chopped (optional)
For the Dressing
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder

Equipment

  • Large pot
  • Colander
  • Large bowl
  • Grill or skillet

Method
 

  1. Cook the pasta according to package directions. Drain and rinse with cold water. Set aside.
  2. If your chicken is not already cooked, grill or pan-fry it until cooked through. Shred or dice the chicken.
  3. In a large bowl, combine the cooked pasta, chicken, red onion, bell pepper, corn, and cilantro (if using).
  4. In a separate small bowl, whisk together the mayonnaise, ketchup, apple cider vinegar, Worcestershire sauce, garlic powder, salt, and pepper for the dressing.
  5. Pour the dressing over the pasta mixture. Add the BBQ sauce and toss gently to combine everything.
  6. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

You can add other vegetables like celery or cherry tomatoes. For a spicier salad, add a pinch of cayenne pepper to the dressing.
