BBQ Chicken Zucchini Boats

These BBQ Chicken Zucchini Boats are a simple and healthy meal. Zucchini halves are filled with seasoned ground chicken and BBQ sauce, then baked until tender.

Ingredients
  

For the Zucchini Boats
  • 2 large Zucchini halved lengthwise
For the Filling
  • 1 lb Ground Chicken
  • 1/2 cup BBQ Sauce
  • 1/4 cup Onion finely chopped
  • 1 clove Garlic minced
  • 1/2 tsp Smoked Paprika
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper
Optional Toppings
  • 1/4 cup Shredded Cheddar Cheese

Equipment

  • Baking sheet
  • Skillet
  • Knife
  • Spoon

Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Scoop out the center of each zucchini half, leaving about a 1/4-inch border. Chop the scooped-out zucchini and set aside.
  3. In a skillet over medium heat, cook the ground chicken until browned. Drain any excess fat.
  4. Add the chopped zucchini, onion, garlic, smoked paprika, salt, and pepper to the skillet. Cook for 5 minutes, or until the vegetables are softened.
  5. Stir in the BBQ sauce and cook for another 2 minutes, until heated through.
  6. Spoon the chicken mixture evenly into the hollowed-out zucchini boats.
  7. Place the zucchini boats on the prepared baking sheet. If using, sprinkle with cheese.
  8. Bake for 20-25 minutes, or until the zucchini is tender and the filling is heated through.

Notes

Serve immediately. You can add other vegetables to the filling, such as corn or bell peppers.
