Method
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Scoop out the center of each zucchini half, leaving about a 1/4-inch border. Chop the scooped-out zucchini and set aside.
- In a skillet over medium heat, cook the ground chicken until browned. Drain any excess fat.
- Add the chopped zucchini, onion, garlic, smoked paprika, salt, and pepper to the skillet. Cook for 5 minutes, or until the vegetables are softened.
- Stir in the BBQ sauce and cook for another 2 minutes, until heated through.
- Spoon the chicken mixture evenly into the hollowed-out zucchini boats.
- Place the zucchini boats on the prepared baking sheet. If using, sprinkle with cheese.
- Bake for 20-25 minutes, or until the zucchini is tender and the filling is heated through.
Notes
Serve immediately. You can add other vegetables to the filling, such as corn or bell peppers.
