Ingredients
  

Salad
  • 1 pound beets cooked and diced
  • 5 ounces fresh spinach washed
  • 1/4 cup red onion thinly sliced
  • 1/4 cup walnuts chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a large bowl, combine the diced beets, spinach, red onion, and walnuts.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, dijon mustard, minced garlic, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately.

Notes

You can use pre-cooked beets to save time. For a creamier salad, add crumbled goat cheese or feta cheese.
