Wet Ingredients
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs lightly beaten
  • 1 tsp vanilla extract
  • 3 very ripe bananas, mashed about 1 1/2 cups mashed
Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Method
 

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, whisk together the sugar and melted butter until combined.
  3. Add the eggs, vanilla extract, and mashed bananas to the sugar mixture. Mix until just combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients. Mix with a spatula until the flour streaks disappear. Do not overmix the batter.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

For the best flavor and moisture, use bananas that are very ripe, with significant brown spots on the peel.
