Ingredients
  

For the Bagels
  • 1 1/2 cup almond flour superfine blanched
  • 1/2 cup coconut flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp xanthan gum (optional, for better texture)
  • 1 cup shredded mozzarella cheese low moisture, part-skim
  • 4 oz cream cheese softened
  • 2 large eggs
For the Egg Wash
  • 1 large egg beaten
  • 1 tbsp water
Optional Toppings
  • sesame seeds
  • poppy seeds
  • everything bagel seasoning
  • garlic powder
  • onion powder

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the almond flour, coconut flour, baking powder, salt, and xanthan gum (if using).
  3. In a separate microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave in 30-second intervals, stirring in between, until melted and smooth. Be careful not to overheat.
  4. Add the melted cheese mixture and the eggs to the dry ingredients. Mix with a spatula until a dough forms. It will be sticky.
  5. Divide the dough into 8 equal portions. Roll each portion into a ball, then flatten slightly. Use your finger or the end of a wooden spoon to create a hole in the center of each bagel, shaping them like a donut.
  6. Place the shaped bagels on the prepared baking sheet.
  7. In a small bowl, whisk together the egg for the wash and the water. Brush this mixture over the tops of the bagels.
  8. Sprinkle your desired toppings over the egg wash.
  9. Bake for 18-20 minutes, or until golden brown and firm to the touch.
  10. Let the bagels cool on a wire rack for at least 10 minutes before slicing and serving.
