Method
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the almond flour, coconut flour, baking powder, salt, and xanthan gum (if using).
- In a separate microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave in 30-second intervals, stirring in between, until melted and smooth. Be careful not to overheat.
- Add the melted cheese mixture and the eggs to the dry ingredients. Mix with a spatula until a dough forms. It will be sticky.
- Divide the dough into 8 equal portions. Roll each portion into a ball, then flatten slightly. Use your finger or the end of a wooden spoon to create a hole in the center of each bagel, shaping them like a donut.
- Place the shaped bagels on the prepared baking sheet.
- In a small bowl, whisk together the egg for the wash and the water. Brush this mixture over the tops of the bagels.
- Sprinkle your desired toppings over the egg wash.
- Bake for 18-20 minutes, or until golden brown and firm to the touch.
- Let the bagels cool on a wire rack for at least 10 minutes before slicing and serving.
