Ingredients

For the Cookies
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup Biscoff cookie butter
  • 1 teaspoon ground cinnamon
For Rolling
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Method

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and Biscoff cookie butter.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the ground cinnamon.
  6. In a small bowl, combine the sugar and cinnamon for rolling.
  7. Roll the cookie dough into balls, about 1 inch in diameter. Then, roll each ball in the cinnamon-sugar mixture.
  8. Place the cookie balls on the prepared baking sheets, about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  10. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
