Blackberry Pistachio Dream Bars

These bars combine the tartness of blackberries with the nutty crunch of pistachios for a delightful treat.

Ingredients
  

For the Crust
  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 cup chopped pistachios
  • 0.5 cup unsalted butter cold, cubed
For the Filling
  • 1 cup fresh or frozen blackberries
  • 0.5 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 0.25 cup chopped pistachios for topping

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8x8 inch baking dish.
  2. In a medium bowl, combine the flour, sugar, and 0.25 cup of pistachios for the crust. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  3. Press about two-thirds of the crust mixture evenly into the bottom of the prepared baking dish.
  4. In a separate bowl, gently toss the blackberries with 0.5 cup sugar, cornstarch, and lemon juice.
  5. Spread the blackberry mixture evenly over the crust in the baking dish.
  6. Crumble the remaining crust mixture over the blackberry layer. Sprinkle the remaining 0.25 cup of chopped pistachios over the top.
  7. Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let the bars cool completely in the pan before cutting into squares.

Notes

You can use frozen blackberries, but do not thaw them before mixing with sugar and cornstarch. Ensure the bars are fully cooled before slicing for clean cuts.
