Blender Pumpkin Waffles (Freezer-Friendly)

Ingredients
  

Waffles
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 cup canned pumpkin puree
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. Combine all waffle ingredients in a blender. Blend until smooth.
  3. Pour about 1/2 cup of batter onto the preheated waffle iron. Cook until golden brown and cooked through, about 3-5 minutes.
  4. Repeat with the remaining batter.
  5. Transfer waffles to a wire rack to cool slightly.
  6. For freezing: Once cooled, place waffles in a single layer on a baking sheet and freeze until solid. Then, transfer to a freezer bag or container.
  7. To reheat: Toast waffles in a toaster or toaster oven until warm.

Notes

You can add a tablespoon of pumpkin seeds or chopped pecans to the batter for extra texture. Serve with maple syrup, whipped cream, or fresh fruit.
