Blueberry Thyme Chicken

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts about 6 oz each
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
For the Blueberry Thyme Sauce
  • 1 cup fresh blueberries
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons lemon juice
  • 2 tablespoons water

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Pat the chicken breasts dry with paper towels. Place them in the prepared baking dish. Drizzle with olive oil, then season with salt and pepper.
  3. In a small bowl, combine the fresh blueberries, honey, thyme leaves, lemon juice, and water. Stir to mix.
  4. Pour the blueberry mixture over the chicken breasts in the baking dish.
  5. Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). The blueberries will burst and create a sauce.
  6. Let the chicken rest for a few minutes before serving. Spoon the blueberry thyme sauce over the chicken.

Notes

Serve with your favorite side dishes, such as rice, quinoa, or a fresh salad.
