Method
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
- Pat the chicken breasts dry with paper towels. Place them in the prepared baking dish. Drizzle with olive oil, then season with salt and pepper.
- In a small bowl, combine the fresh blueberries, honey, thyme leaves, lemon juice, and water. Stir to mix.
- Pour the blueberry mixture over the chicken breasts in the baking dish.
- Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). The blueberries will burst and create a sauce.
- Let the chicken rest for a few minutes before serving. Spoon the blueberry thyme sauce over the chicken.
