- Make the dough: In a bowl, mix the warm water, yeast, and 1 Tbsp sugar. Let stand for 5 minutes until foamy. Add the flour and 1 tsp salt. Mix until a shaggy dough forms. Add the 1 Tbsp olive oil and knead for 5 to 7 minutes until smooth. Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour.
- Make the sauce: Heat 2 Tbsp olive oil in a saucepan over medium heat. Add minced garlic and cook for 30 seconds until fragrant. Stir in crushed tomatoes, tomato paste, 1/2 Tbsp sugar, 3/4 tsp salt, basil, oregano, black pepper, and crushed red pepper (if using). Simmer for 10 minutes, stirring occasionally. Remove from heat.
- Preheat your oven to 450°F (232°C). Punch down the risen dough and roll or press it out onto a lightly floured baking sheet or pizza stone to your desired thickness.
- Spread the prepared pizza sauce evenly over the dough, leaving a small border for the crust.
- Sprinkle the shredded cheese over the sauce. Scatter the cooked bacon pieces over the cheese.
- Bake for 10 minutes. Remove the pizza from the oven. Use the back of a spoon to make four small wells in the cheese layer. Crack one egg into each well.
- Return the pizza to the oven and bake for an additional 5 to 7 minutes, or until the egg whites are set but the yolks are still runny. If you prefer firm yolks, bake longer.
- Remove the pizza from the oven. Top with sliced green onions before slicing and serving immediately.

Notes
If you do not have an oven, you can cook the dough in a large skillet on the stovetop, covered, until the bottom is cooked, then add toppings and cover again until the cheese melts and the eggs set. This will take longer.
