Buffalo Chicken Lettuce Wraps

Ingredients
  

For the Chicken
  • 1 pound chicken breast boneless, skinless, cut into bite-sized pieces
  • 1/2 cup buffalo sauce your favorite
  • 2 tablespoons ranch dressing plus more for serving
For the Wraps
  • 8 large lettuce leaves such as butter or iceberg
  • 1/4 cup shredded carrots optional
  • 1/4 cup diced celery optional
  • 2 tablespoons blue cheese crumbles optional

Method
 

  1. Cook the chicken in a skillet over medium-high heat until cooked through. Drain any excess liquid.
  2. Add the buffalo sauce and ranch dressing to the skillet with the chicken. Stir to coat the chicken evenly.
  3. Spoon the buffalo chicken mixture into the lettuce leaves.
  4. Top with shredded carrots, diced celery, and blue cheese crumbles, if desired.
  5. Serve immediately with extra ranch dressing on the side.

Notes

You can adjust the amount of buffalo sauce and ranch dressing to your preference. For a spicier wrap, add a pinch of cayenne pepper to the chicken mixture.
