- Preheat your oven to 400°F (200°C). Toss the potatoes with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly browned.
- While the potatoes are roasting, season the beef cubes with salt and pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the beef cubes in batches until browned on all sides. Remove beef from skillet and set aside.
- Reduce the skillet heat to medium. Add the butter and minced garlic. Cook for 1 minute until fragrant, being careful not to burn the garlic.
- Pour in the beef broth and soy sauce. Stir to combine and scrape up any browned bits from the bottom of the skillet.
- Add the Worcestershire sauce and return the seared beef to the skillet. Simmer for 5-7 minutes, or until the beef is cooked through and the sauce has slightly thickened.
- Add the roasted potatoes to the skillet with the beef and sauce. Toss to coat everything evenly.
- Garnish with fresh chopped parsley before serving.
Notes
You can substitute other cuts of beef like sirloin tip or flank steak. Adjust cooking time based on the thickness of your beef cubes.
