- In a large mixing bowl, combine the rolled oats, protein powder, butterscotch chips, peanut butter, honey, and vanilla extract.
- Mix until well combined. If the mixture is too dry, add milk or water one tablespoon at a time until it reaches a consistency that can be rolled into balls.
- Roll the mixture into 12 small balls.
- Place the protein balls on a plate or baking sheet lined with parchment paper. Chill in the refrigerator for at least 30 minutes to firm up.
- Serve and enjoy.
