Cajun Crispy Chicken Sandwich

A spicy and crispy chicken sandwich with a Cajun kick.

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts chicken breasts cut in half horizontally
  • 1 cup all-purpose flour
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup milk
  • 4 cups vegetable oil for frying
For the Sandwich
  • 4 brioche buns brioche buns split
  • 1/2 cup mayonnaise
  • 1 tablespoon hot sauce optional
  • 1 cup shredded lettuce
  • 2 tomatoes tomatoes sliced

Equipment

  • Large skillet
  • Tongs
  • Plate
  • Bowl

Method
 

  1. In a shallow bowl, combine flour, Cajun seasoning, salt, and pepper.
  2. In another shallow bowl, whisk together eggs and milk.
  3. Dip each chicken cutlet first into the flour mixture, coating evenly. Then dip into the egg mixture, letting excess drip off. Finally, coat again in the flour mixture.
  4. Heat vegetable oil in a large skillet over medium-high heat until shimmering.
  5. Carefully place chicken cutlets in the hot oil. Fry for 4-5 minutes per side, until golden brown and cooked through.
  6. Remove chicken from skillet and place on a plate lined with paper towels to drain excess oil.
  7. In a small bowl, mix mayonnaise and hot sauce (if using).
  8. Spread the mayonnaise mixture on the inside of the brioche buns.
  9. Assemble the sandwiches by placing a piece of crispy chicken on the bottom bun, topped with lettuce and tomato.
  10. Place the top bun on the sandwich.

Notes

Serve immediately with your favorite sides.
