Method
- In a shallow bowl, combine flour, Cajun seasoning, salt, and pepper.
- In another shallow bowl, whisk together eggs and milk.
- Dip each chicken cutlet first into the flour mixture, coating evenly. Then dip into the egg mixture, letting excess drip off. Finally, coat again in the flour mixture.
- Heat vegetable oil in a large skillet over medium-high heat until shimmering.
- Carefully place chicken cutlets in the hot oil. Fry for 4-5 minutes per side, until golden brown and cooked through.
- Remove chicken from skillet and place on a plate lined with paper towels to drain excess oil.
- In a small bowl, mix mayonnaise and hot sauce (if using).
- Spread the mayonnaise mixture on the inside of the brioche buns.
- Assemble the sandwiches by placing a piece of crispy chicken on the bottom bun, topped with lettuce and tomato.
- Place the top bun on the sandwich.
