- Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, Cajun seasoning, salt, and pepper. Cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add the minced garlic to the skillet and cook for about 30 seconds until fragrant, being careful not to burn it.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Add the uncooked rotini pasta to the skillet. Cover and reduce heat to medium-low. Cook for 10-12 minutes, or until pasta is al dente, stirring occasionally to prevent sticking.
- Stir in the heavy cream and Parmesan cheese. Return the cooked chicken to the skillet. Stir until the sauce thickens slightly and the chicken is heated through.
- Garnish with fresh parsley before serving.
Notes
You can add vegetables like bell peppers or onions along with the garlic for extra flavor and nutrition.
