Cajun Garlic Chicken Rotini Skillet

Ingredients
  

For the Chicken and Pasta
  • 1 lb Boneless, skinless chicken breasts Cut into bite-sized pieces
  • 8 oz Rotini pasta Uncooked
  • 1 tablespoon Olive oil
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
For the Sauce
  • 4 cloves Garlic Minced
  • 2 cups Chicken broth
  • 1/2 cup Heavy cream
  • 1/4 cup Grated Parmesan cheese
  • 2 tablespoons Fresh parsley Chopped, for garnish

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, Cajun seasoning, salt, and pepper. Cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  2. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant, being careful not to burn it.
  3. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  4. Add the uncooked rotini pasta to the skillet. Cover and reduce heat to medium-low. Cook for 10-12 minutes, or until pasta is al dente, stirring occasionally to prevent sticking.
  5. Stir in the heavy cream and Parmesan cheese. Return the cooked chicken to the skillet. Stir until the sauce thickens slightly and the chicken is heated through.
  6. Garnish with fresh parsley before serving.

Notes

You can add vegetables like bell peppers or onions along with the garlic for extra flavor and nutrition.
