Cake Mix Cookies

This recipe uses a box of cake mix to make simple cookies quickly. You can adjust the mix flavor to change the cookie flavor.

Ingredients
  

  • 1 box (15.25 oz) Boxed cake mix (any flavor) Do not use a 'super moist' variety
  • 2 large Eggs
  • 1/2 cup Vegetable oil

Equipment

  • Mixing bowl
  • Baking sheet
  • Electric mixer (optional)

Method
 

  1. Preheat your oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  2. In a mixing bowl, combine the cake mix, eggs, and vegetable oil. Mix until the dough comes together.
  3. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  4. Bake for 8 to 10 minutes. The edges should look set.
  5. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.

Notes

You can add mix-ins like chocolate chips or sprinkles to the dough before scooping. If you use a chocolate cake mix, consider adding chocolate chips for extra flavor.
