Carrot And Zucchini Bars

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, combine the granulated sugar, vegetable oil, eggs, and vanilla extract. Mix well.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Fold in the grated carrots, zucchini, and nuts (if using).
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bars cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
  9. For the glaze, whisk together the powdered sugar and milk or lemon juice until smooth. Drizzle over the cooled bars.

Notes

Store cooled bars in an airtight container at room temperature for up to 3 days.
