Cheesy Vegetable Chowder

Ingredients
  

For the Chowder
  • 2 tablespoons butter
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 2 cups milk or half-and-half
  • 1 cup potatoes diced
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup corn frozen or fresh
  • 1 cup cheddar cheese shredded
  • 1/4 cup all-purpose flour
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Whisk in the flour and cook for 1 minute, stirring constantly.
  4. Gradually whisk in the vegetable broth and milk until smooth.
  5. Add the diced potatoes, carrots, and celery. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until vegetables are tender.
  6. Stir in the corn and cook for 5 minutes more.
  7. Remove from heat and stir in the shredded cheddar cheese until melted and smooth.
  8. Season with salt and pepper to taste.

Notes

Serve hot. Garnish with fresh parsley if desired.
