- Preheat your oven to 200°C (400°F).
- In a large bowl, toss the cut potatoes with olive oil, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on a baking sheet.
- Bake for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
- While the fries are baking, prepare your toppings. Ensure your chicken is cooked and diced, and your bacon is cooked and crumbled.
- Once the fries are done, remove them from the oven and place them on a serving platter.
- Top the fries with the diced chicken, crumbled bacon, and shredded cheddar cheese.
- Return the platter to the oven for 2-3 minutes, or until the cheese is melted.
- Remove from the oven and dollop with sour cream. Garnish with chopped chives.
- Serve immediately.
Notes
You can add other toppings like jalapeños, onions, or different types of cheese.
