Chicken Caprese Skillet

This recipe features chicken breasts cooked with tomatoes, mozzarella, and basil for a quick and flavorful meal.

Ingredients
  

  • 4 boneless, skinless chicken breasts pounded to 1/2-inch thickness
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cloves garlic minced
  • 1 can diced tomatoes 14.5 ounce, undrained
  • 1/2 cup chicken broth
  • 4 ounces fresh mozzarella sliced
  • 1/4 cup fresh basil leaves chopped

Method
 

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken to the skillet and cook for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  4. Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  5. Pour in diced tomatoes and chicken broth. Bring to a simmer and cook for 5 minutes, scraping up any browned bits from the bottom of the skillet.
  6. Return chicken to the skillet. Top each chicken breast with slices of fresh mozzarella.
  7. Cover the skillet and cook for 2-3 minutes, or until the mozzarella is melted and bubbly.
  8. Garnish with fresh basil before serving.

Notes

Serve immediately. This dish pairs well with pasta, rice, or a side salad.
