Method
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken to the skillet and cook for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and cook for 30 seconds until fragrant.
- Pour in diced tomatoes and chicken broth. Bring to a simmer and cook for 5 minutes, scraping up any browned bits from the bottom of the skillet.
- Return chicken to the skillet. Top each chicken breast with slices of fresh mozzarella.
- Cover the skillet and cook for 2-3 minutes, or until the mozzarella is melted and bubbly.
- Garnish with fresh basil before serving.

Serve immediately. This dish pairs well with pasta, rice, or a side salad.
