- In a shallow dish, combine flour, salt, and pepper. Dredge the chicken pieces in the flour mixture, shaking off any excess.
- Heat olive oil in a large skillet over medium-high heat. Add the floured chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Pour in heavy cream and bring to a simmer, stirring constantly. Reduce heat to low and cook until the sauce thickens slightly, about 3-5 minutes.
- Stir in grated Parmesan cheese, salt, and pepper. Continue to cook, stirring, until the cheese is melted and the sauce is smooth.
- Return the cooked chicken to the skillet and toss to coat in the Parmesan sauce. Heat through for 1-2 minutes.
- Serve the chicken pillows immediately with the Parmesan sauce.
