Ingredients
  

For the Salad
  • 1 can (15 oz) chickpeas rinsed and drained
  • 2 peaches ripe, pitted and diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh mint chopped
For the Vinaigrette
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. In a large bowl, combine the chickpeas, diced peaches, chopped red onion, and chopped mint.
  2. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper.
  3. Pour the vinaigrette over the salad ingredients and toss gently to combine.
  4. Serve immediately.

Notes

You can substitute nectarines or apricots for the peaches if they are not in season.
