Ingredients
  

For the Truffles
  • 1 (15-ounce) can chickpeas rinsed and drained
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup maple syrup
  • 2 tablespoons coconut oil melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
Optional Toppings
  • 1/4 cup shredded coconut
  • 2 tablespoons chopped nuts e.g., almonds, walnuts
  • 2 tablespoons mini chocolate chips

Equipment

  • Baking sheet
  • Parchment paper

Method
 

  1. Add the rinsed and drained chickpeas to a food processor. Process until smooth.
  2. Add the unsweetened cocoa powder, maple syrup, melted coconut oil, vanilla extract, and salt to the food processor. Process until well combined and a dough-like consistency forms.
  3. If the mixture is too sticky, you can add a tablespoon more cocoa powder or chill it for 15-20 minutes.
  4. Roll the mixture into small balls, about 1 inch in diameter.
  5. If using, roll the truffles in your desired toppings such as shredded coconut, chopped nuts, or mini chocolate chips.
  6. Place the truffles on a baking sheet lined with parchment paper.
  7. Chill the truffles in the refrigerator for at least 30 minutes to firm up before serving.
