- Add the rinsed and drained chickpeas to a food processor. Process until smooth.
- Add the unsweetened cocoa powder, maple syrup, melted coconut oil, vanilla extract, and salt to the food processor. Process until well combined and a dough-like consistency forms.
- If the mixture is too sticky, you can add a tablespoon more cocoa powder or chill it for 15-20 minutes.
- Roll the mixture into small balls, about 1 inch in diameter.
- If using, roll the truffles in your desired toppings such as shredded coconut, chopped nuts, or mini chocolate chips.
- Place the truffles on a baking sheet lined with parchment paper.
- Chill the truffles in the refrigerator for at least 30 minutes to firm up before serving.
