Cinnamon Apple Breakfast Quinoa

Ingredients
  

  • 1 cup Quinoa rinsed
  • 2 cups Water
  • 1 cup Milk or dairy-free alternative
  • 1 large Apple peeled, cored, and diced
  • 2 tablespoons Maple syrup or to taste
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg optional
  • Salt pinch

Method
 

  1. Combine quinoa and water in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until water is absorbed.
  2. Stir in milk, diced apple, maple syrup, cinnamon, nutmeg (if using), and salt.
  3. Cook over medium-low heat, stirring occasionally, for 5-7 minutes, or until apples are tender and the mixture has thickened.
  4. Serve warm.

Notes

You can add nuts or seeds for extra crunch.
