- Combine quinoa and water in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until water is absorbed.
- Stir in milk, diced apple, maple syrup, cinnamon, nutmeg (if using), and salt.
- Cook over medium-low heat, stirring occasionally, for 5-7 minutes, or until apples are tender and the mixture has thickened.
- Serve warm.
