- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the cottage cheese, egg, and maple syrup. Mix until well combined.
- Add the flour, rolled oats, cinnamon, baking powder, and salt to the wet ingredients. Stir until just combined. Do not overmix.
- Gently fold in the diced apple.
- Drop spoonfuls of the batter onto the prepared baking sheet, about 1-2 tablespoons per bite. Leave some space between them.
- Bake for 12-15 minutes, or until the edges are golden brown and the bites are set.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
You can serve these warm or at room temperature. They store well in an airtight container in the refrigerator for up to 3 days.
