Cinnamon Apple Cottage Cheese Bites

Ingredients
  

For the Bites
  • 1 cup cottage cheese full fat recommended
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1/4 cup rolled oats
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup apple finely diced

Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese, egg, and maple syrup. Mix until well combined.
  3. Add the flour, rolled oats, cinnamon, baking powder, and salt to the wet ingredients. Stir until just combined. Do not overmix.
  4. Gently fold in the diced apple.
  5. Drop spoonfuls of the batter onto the prepared baking sheet, about 1-2 tablespoons per bite. Leave some space between them.
  6. Bake for 12-15 minutes, or until the edges are golden brown and the bites are set.
  7. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

You can serve these warm or at room temperature. They store well in an airtight container in the refrigerator for up to 3 days.
