Classic Pumpkin Chocolate Chip Baked Oatmeal

Ingredients
  

For the Oatmeal
  • 2 cups rolled oats
  • 1/4 cup brown sugar packed
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup milk any kind
  • 1 cup pumpkin puree
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips plus more for topping

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 8x8 inch baking dish.
  2. In a large bowl, combine the rolled oats, brown sugar, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In a separate bowl, whisk together the milk, pumpkin puree, egg, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chocolate chips.
  5. Pour the mixture into the prepared baking dish and spread evenly. Sprinkle with additional chocolate chips, if desired.
  6. Bake for 30 minutes, or until the center is set and the edges are lightly golden.
  7. Let cool slightly before serving.

Notes

Serve warm with your favorite toppings like maple syrup, yogurt, or fresh fruit.
