- In a bowl, combine chia seeds, coconut milk, maple syrup, and vanilla extract.
- Whisk well to combine and ensure there are no clumps of chia seeds.
- Pour the mixture into a jar or airtight container.
- Refrigerate for at least 2 hours, or preferably overnight, until thickened.
- Stir before serving. Add toppings if desired.
Notes
Serve chilled. You can add fresh fruit, nuts, or shredded coconut as toppings.
