  • 1.5 cups cottage cheese
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese cheddar or your favorite
  • 1/4 cup chopped vegetables e.g., bell peppers, spinach, onions

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin.
  2. In a blender, combine the cottage cheese, eggs, milk, salt, and pepper. Blend until smooth.

  4. Pour the mixture evenly into the prepared muffin cups.
  5. Bake for 20-25 minutes, or until the egg bites are set and lightly golden.
