Ingredients
  

For the Flatbread
  • 1 cup cottage cheese full fat or low fat
  • 2 large eggs
  • 1 tablespoon flaxseed meal optional, for binding
  • 1/2 teaspoon garlic powder optional
  • 1/4 teaspoon salt optional
  • 1/4 teaspoon black pepper optional

Method
 

  1. In a bowl, combine the cottage cheese and eggs. Mix well with a fork until smooth.
  2. Stir in the flaxseed meal, garlic powder, salt, and pepper if using.
  3. Heat a non-stick skillet over medium heat. You can add a small amount of oil or cooking spray if your pan is not well-seasoned.
  4. Pour half of the batter into the hot skillet to form a flatbread. Cook for about 4-5 minutes, until the bottom is golden brown and set.
  5. Carefully flip the flatbread with a spatula and cook the other side for another 4-5 minutes, until golden brown and cooked through.
  6. Repeat with the remaining batter to make the second flatbread.
  7. Serve warm with your favorite toppings.

Notes

You can customize this flatbread with herbs like chives or parsley, or a pinch of your favorite spice blend. It works well as a base for avocado, eggs, or smoked salmon.
