- In a bowl, combine the cottage cheese and eggs. Mix well with a fork until smooth.
- Stir in the flaxseed meal, garlic powder, salt, and pepper if using.
- Heat a non-stick skillet over medium heat. You can add a small amount of oil or cooking spray if your pan is not well-seasoned.
- Pour half of the batter into the hot skillet to form a flatbread. Cook for about 4-5 minutes, until the bottom is golden brown and set.
- Carefully flip the flatbread with a spatula and cook the other side for another 4-5 minutes, until golden brown and cooked through.
- Repeat with the remaining batter to make the second flatbread.
- Serve warm with your favorite toppings.
Notes
You can customize this flatbread with herbs like chives or parsley, or a pinch of your favorite spice blend. It works well as a base for avocado, eggs, or smoked salmon.
