Cowboy Mushrooms

Ingredients
  

For the Mushrooms
  • 1 pound Cremini mushrooms cleaned and halved or quartered if large
  • 2 tablespoons Olive oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1/2 teaspoon Smoked paprika
  • 1/4 teaspoon Cayenne pepper optional
  • 1/4 cup Beef broth
  • 2 tablespoons Fresh parsley chopped
  • Salt to taste Salt
  • Black pepper to taste Black pepper

Equipment

  • Skillet
  • Knife
  • Cutting board

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the mushrooms to the skillet and cook, stirring occasionally, until browned and tender, about 5-7 minutes.
  3. Add the chopped onion to the skillet and cook until softened, about 3-4 minutes.
  4. Stir in the minced garlic, smoked paprika, and cayenne pepper (if using). Cook for 1 minute more until fragrant.
  5. Pour in the beef broth and scrape up any browned bits from the bottom of the skillet.
  6. Simmer for 2-3 minutes, allowing the sauce to thicken slightly.
  7. Stir in the fresh parsley. Season with salt and black pepper to taste.
  8. Serve hot.

Notes

You can substitute other types of mushrooms like button or shiitake. For a spicier kick, add more cayenne pepper.
