Cranberry Brie Bites

These cranberry brie bites are a simple and delicious appetizer perfect for any occasion.

Ingredients
  

For the Bites
  • 1 sheet Puff pastry thawed
  • 4 oz Brie cheese rind removed, cut into 12 pieces
  • 1/4 cup Cranberry sauce canned or homemade
  • 1 tbsp Egg beaten (for egg wash)

Equipment

  • Muffin tin
  • Rolling Pin
  • Cookie cutter

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
  2. On a lightly floured surface, roll out the puff pastry sheet slightly. Use a round cookie cutter (about 3 inches in diameter) to cut out 12 circles.
  3. Gently press each puff pastry circle into a cup of the muffin tin, forming a small cup.
  4. Place one piece of brie cheese into each puff pastry cup.
  5. Top each piece of brie with about 1 teaspoon of cranberry sauce.
  6. Brush the edges of the puff pastry with the beaten egg wash.
  7. Bake for 12-15 minutes, or until the puff pastry is golden brown and puffed, and the brie is melted.
  8. Let the bites cool in the muffin tin for a few minutes before carefully removing them.

Notes

Serve warm. You can garnish with a sprig of rosemary or a sprinkle of chopped nuts if desired.
