Creamy Garlic Shrimp Over Mashed Potatoes

A quick and easy recipe for creamy garlic shrimp served over fluffy mashed potatoes.

Ingredients
  

For the Mashed Potatoes
  • 1 kg Potatoes peeled and quartered
  • 1/2 cup Milk warmed
  • 4 tbsp Butter
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
For the Creamy Garlic Shrimp
  • 1 tbsp Olive oil
  • 1 lb Shrimp peeled and deveined
  • 4 cloves Garlic minced
  • 1/2 cup Heavy cream
  • 1/4 cup Parmesan cheese grated
  • 2 tbsp Fresh parsley chopped
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper

Equipment

  • Large skillet
  • Potato masher
  • Saucepan

Method
 

  1. Boil the potatoes in a saucepan until tender. Drain and mash with milk, butter, salt, and pepper until smooth.
  2. While potatoes are cooking, heat olive oil in a large skillet over medium heat.
  3. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  4. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  5. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese, salt, and pepper. Cook until sauce thickens slightly.
  6. Return the shrimp to the skillet and toss to coat in the sauce. Stir in fresh parsley.
  7. Serve the creamy garlic shrimp over the mashed potatoes.

Notes

For a spicier dish, add a pinch of red pepper flakes with the garlic.
