Ingredients
  

For the Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
For the Lemon Filling
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup lemon juice freshly squeezed
  • 1 tablespoon lemon zest
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
  2. In a medium bowl, combine the flour and sugar for the crust. Pour in the melted butter and mix until well combined. Press the mixture evenly into the bottom of the prepared baking pan.
  3. Bake the crust for 15-20 minutes, or until lightly golden. Remove from the oven and let it cool slightly.
  4. While the crust cools, prepare the filling. In a separate bowl, whisk together the eggs, sugar, lemon juice, lemon zest, flour, and salt until smooth.
  5. Pour the lemon filling evenly over the warm crust.
  6. Bake for another 20-25 minutes, or until the filling is set and the edges are lightly golden.
  7. Let the lemon squares cool completely on a wire rack, then chill in the refrigerator for at least 1 hour before cutting into squares.
