Ingredients
  

For the Stroganoff
  • 1 tablespoon Olive oil
  • 1 pound Ground turkey
  • 1 medium Onion chopped
  • 8 ounces Mushrooms sliced
  • 2 cloves Garlic minced
  • 1 tablespoon All-purpose flour
  • 1.5 cups Low-sodium chicken broth
  • 1/2 cup Plain nonfat Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1/4 cup Fresh parsley chopped
  • 1 teaspoon Salt or to taste
  • 1/2 teaspoon Black pepper or to taste

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  2. Add chopped onion and sliced mushrooms to the skillet. Cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Sprinkle flour over the turkey and vegetable mixture. Stir well and cook for 1 minute.
  5. Gradually whisk in chicken broth until smooth. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the sauce thickens.
  6. Remove the skillet from heat. Stir in Greek yogurt and Dijon mustard until well combined and creamy.
  7. Stir in fresh parsley, salt, and pepper. Adjust seasoning as needed.
  8. Serve hot over your favorite pasta, rice, or noodles.

Notes

For a richer flavor, you can use regular yogurt instead of Greek yogurt, but it may require slightly less liquid to achieve the desired consistency.
