Method
- Season chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and cook for about 1 minute until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
- Stir in heavy cream, Parmesan cheese, and sundried tomatoes. Bring to a simmer and cook for 2-3 minutes until the sauce thickens slightly.
- Add spinach to the skillet and stir until it wilts.
- Return the cooked chicken to the skillet and stir to coat in the sauce. Heat through for 1-2 minutes.
