Creamy Tuscan Chicken

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts chicken breasts cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
For the Sauce
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/4 cup sundried tomatoes chopped

Method
 

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
  3. Add minced garlic to the skillet and cook for about 1 minute until fragrant.
  4. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
  5. Stir in heavy cream, Parmesan cheese, and sundried tomatoes. Bring to a simmer and cook for 2-3 minutes until the sauce thickens slightly.
  6. Add spinach to the skillet and stir until it wilts.
  7. Return the cooked chicken to the skillet and stir to coat in the sauce. Heat through for 1-2 minutes.
