- Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
- Set up three shallow dishes. In the first, place the flour. In the second, place the beaten eggs. In the third, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper.
- Dredge each chicken cutlet first in the flour, shaking off any excess. Then dip it into the beaten eggs, letting any excess drip off. Finally, coat the chicken thoroughly with the panko-Parmesan mixture, pressing gently to help it adhere.
- Place the coated chicken cutlets on the prepared baking sheet. Drizzle with olive oil or spray with cooking spray.
- Bake for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown and crispy. The internal temperature should reach 165°F (74°C).
- Serve immediately.
